What to avoid

Pork is Everywhere

Hidden pork in Jaliscan cuisine: Tortas ahogadas use carnitas (pork). Birria is goat or beef but cooked alongside pork in many traditional spots — ask. Frijoles refritos are sometimes cooked with manteca (lard). Chicharrón = pork rind. Costillas usually = pork ribs. Carnitas, cochinita = pork.
Useful Spanish: "¿Tiene cerdo?" (Does it have pork?), "¿Es carne halal?" (Is the meat halal?), "Sin manteca, por favor" (No lard, please), "Soy musulmán/musulmana, no como cerdo" (I'm Muslim, I don't eat pork).
